American made, great price, hardwood handles, fast shipping. You will need to do a lil work to get them sharp, however I do mean a lil work it doesn't take much to achieve a razors edge. These are high carbon steel I keep my blades coated with olive oil. I also treated the handles with olive oil. My advice is Order and Enjoy!

These are identical to the knives you used to see in Grandma's drawer. As said in other reviews, they aren't shipped razor-sharp, but they will sharpen to a hair popping edge and hold a good edge for a very long time. The high carbon steel (very hard) and wooden handles are exactly as they were years ago.
Just a few pointers for those that are accustomed to stainless steel knives:
These knives need to be washed and dried immediately after use. Leaving them wet will cause them to rust and acids from food, if left on them, will corrode the metal. DO NOT leave them in a sink of dish water and always HAND WASH and dry. Do this and these knives will last a lifetime. Also, use food grade mineral oil on the handles from time to time to keep the wood in good shape. If your house is humid, you can use the mineral oil on the blade to protect it from corroding while being stored.
These knives should never be used on glass, ceramic, plates or other hard cutting surfaces. The hard metal can chip if abused and will need to have those chips ground out.
Look up how to hone or strop knives. Do this regularly to keep the edge sharp and extend the time between sharpenings (this applies to all knives.
Over time, the metal will acquire a patina and darken or even stain in some spots. This is normal. Don't try to clean it off as it will help protect the metal.
You can't go wrong with these knives. Get them!

These knives arrived with pretty plain edges. most knives do and the most expensive Jap kitchen cutlery arrives with a blunt edge. real chefs want to put their own edge at their favorite angle on their prized knives. Can't fault Old Hickory for that.
They have taken superb edges that I could shave with if I wanted a lot of scars on my face. That 1095 sorta steel cannot be beaten except for rusting. I am delighted and these work as well as i remember from my youth. You cannot go wrong for the money. Tomatoes slice into transparent thin slices.

While on vacation at a little cottage in Maine I came across the owners old hickory knives and had to have them but not being a thief I looked online to see if I could find them and was happy to see they were much cheaper than expected. When I got them I was disappointed that they changed the handles and blade thickness from the older set I thought I was buying. That said, I Paid less than $50 for a set of 5 quality knives so it's Def a good value I just hate to see old school quality go by the wayside. I would have given 5 stars had there been an option to pay more for the old style knives. Would be great to see an upgrade option to keep em alive!

Been married long time, had our kitchen knives longer. So when they started to give up the ghost, they did it two at a time. Replaced the primary set with these 1095 Carbon Steel knives in one shot! Great price, after a few passes with a Victorinox sharpener, they became razor sharp! My wife loves them. She was able to prepare whole fish in no time and a hen for my son.
Carbon Steel takes a little extra care but it makes preparing food a breeze, even for the non cook. Great for the outdoor range too.
